Potato Chip-Crusted Cod with Lemon Garlic Aioli

Potato Chip-Crusted Cod with Lemon Garlic Aioli

Ingredients

  • ½ cup light mayo

  • 1 tbsp lemon juice

  • 1 tsp minced garlic

  • salt and pepper to taste

Directions

  1. Preheat oven to 450. Thaw and pat fish dry.

  2. In one bowl, whisk the eggs. In another bowl, combine garlic powder, paprika, crushed potato chips, and breadcrumbs.

  3. Slice the cod filets into strips and dip each strip in the egg and then dip in the potato chip mixture to coat.

  4. Place on a baking sheet and bake for 10-15 minutes until cod is flaky.

  5. While the cod cooks, whisk together mayo, lemon juice, garlic, salt and pepper.

  6. Serve together and and enjoy!
