Wild Alaska cod strips are dipped in egg, coated in crushed potato chips and breadcrumbs, and baked until crisp and flaky, then served with a quick lemon garlic aioli.

Ingredients

  • 2 x 6oz Wild Alaska Cod
  • 3 eggs beaten
  • 1 cup crushed potato chips
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¾ cup breadcrumbs
  • parchment paper or cooking spray, for the baking sheet

Aioli:

  • ½ cup light mayo
  • 1 tbsp lemon juice
  • 1 tsp minced garlic
  • salt and pepper to taste

Directions

  1. Preheat oven to 450°F. Thaw and pat fish dry.

  2. In one bowl, whisk the eggs. In another bowl, combine garlic powder, paprika, crushed potato chips, and breadcrumbs.

  3. Slice the cod filets into strips and dip each strip in the egg and then dip in the potato chip mixture to coat.

  4. Line a baking sheet with parchment paper or coat with cooking spray. Place the coated cod on the sheet and bake for 10-15 minutes until cod is flaky.

  5. While the cod cooks, whisk together mayo, lemon juice, garlic, salt and pepper.

  6. Serve together and enjoy!
