Open-Face Apple Tuna Sandwiches

Ingredients

1 honeycrisp apple

¼ cup light mayo

2 tbsp dijon mustard

1 tbsp lemon juice

⅓ cup green onion, diced

½ honeycrisp apples, diced

salt & pepper
-
¼ cup chopped pistachios or almonds
Directions
Open can of tuna and place contents in bowl.
Add mayo, mustard, and lemon juice to the tuna. Mix until well combined.
Gently stir in diced green onions, honeycrisp apples, and nuts of choice. Add salt and pepper.
Thinly slice remaining half of honeycrisp apple to create “sandwich” slices.
Top each half with a scoop of the tuna mixture.
Serve immediately or store in the fridge for up to 2 days. Enjoy!
optional: add some white cheddar on top
