Cucumber Sushi Bites

These Cucumber Sushi Bites are a refreshing and flavorful snack or appetizer that’s perfect for any occasion. They feature wild Coho salmon mixed with creamy Kewpie mayo, a kick of sriracha, and a hint of sesame oil, creating a rich and spicy filling. This delicious mixture is spooned onto crisp cucumber slices, offering a light and refreshing base. Topped with sesame seeds and chopped green onion, these bite-sized treats deliver a satisfying crunch and a burst of umami. Simple to make and packed with flavor, they’re a great low-carb alternative to traditional sushi, perfect for sharing or enjoying on your own!

Ingredients
½ cup Wild Alaska Coho Salmon
1 tbsp kewpie mayo (start with less and adjust for flavor and texture)
2 tsp sriracha
1 tsp sesame oil
cucumber, sliced thick
sesame seeds
green onions, diced
Directions
Thaw coho salmon meat and add to a bowl. Mix in kewpie mayo, sriracha, and sesame oil. Adjust sauces to taste.
Slice a cucumber into round, thick slices.
Top each cucumber bite with salmon. Sprinkle sesame seeds and green onions over them.
Serve with soy sauce and enjoy!
