Premier Catch Crustless Tuna Egg Muffins
breakfast or lunch
2 eggs or 1 egg + 1 egg white
1 cup mixed vegetables. I used zuchini, squash, tomatoes, broccoli, and cabbage.
1/4 cup onion, chopped
2 tbsp garlic chopped
salt & pepper
optional: 1/4 cup shredded cheese
Preheat oven to 350 degrees F. Lightly coat a muffin tin with nonstick spray.
Strain and empty the canned tuna to a large mixing bowl. Use a fork to break it apart.
Add the eggs to the bowl and mix thoroughly.
When the tuna and eggs are combined, stir in the mixed veggies, onion, garlic, salt, and pepper.
Optional: stir in cheese or red pepper flakes.
Fill muffin tins 3/4 of the way full and bake for 20 minutes. Enjoy!
