Coconut Curry with Sablefish

These recipes were created from our passion for seafood, using Premier Catch’s tasty, wild-caught Alaskan Sablefish. We love to share them with our friends and family. From our kitchen to yours, here’s one of our favorites!
Ingredients
salt & pepper
Curry simmer sauce
¼ cup frozen peas
1 carrot, peeled and chopped
white rice
2 scallions, chopped
lime
cilantro as a garnish
1 thai chile, sliced and seeds removed
Directions
In a shallow saucepan, add the curry sauce, peas, and carrots. Slowly begin to simmer.
Season the sablefish with salt and pepper.
Heat olive oil in skillet over medium heat.
Sear the sablefish skin side down for 3 minutes and then flip and repeat. Once cooked, remove from skillet and add to the saucepan with the curry sauce and vegetables.
Let the fish simmer for 15-30 minutes. (due to the high oil content of sablefish, it is impossible to overcook!)
Cook the rice according to package.
Serve sablefish with sauce and vegetables over the rice. Garnish with fresh lime juice, green onions, cilantro, and chopped chiles.
