Seared King Salmon Bowl

Wild Alaska king salmon brushed with olive oil, seasoned and seared three to four minutes a side in a cast-iron skillet until it flakes apart. It goes over white rice with sliced avocado and a salad of cherry tomatoes, cucumber and red onion dressed in rice wine vinegar, honey and lime. Serves two.

Seared King Salmon Bowl

Ingredients

    • 4 cups cooked white rice

    • 1 avocado, sliced

    • sesame seeds

    • limes to garnish

    • sliced cucumber to garnish

    • ½ cup cherry tomatoes, halved

    • ½ cup cucumber, sliced

    • 1 tbsp cilantro, diced

    • 1 tbsp green onions, diced

    • ¼ cup red onion, diced

    • 1 tbsp rice wine vinegar

    • 2 tsp honey (adjust to taste)

    • juice of 1 lime

    • Salt and pepper, to taste

    Directions

    1. Thaw salmon and pat dry. Brush on olive oil and season with salt and pepper.

    2. Cook rice according to package.

    3. In a large bowl, add all of the tomato and cucumber salad ingredients. Gently mix until well combined.

    4. Heat olive oil in a cast-iron skillet over medium-high heat.

    5. Sear salmon for 3-4 minutes per side or until it easily flakes apart.

    6. Serve salmon on top of rice. Add the tomato cucumber salad, sliced avocado, and the garnish cucumber. Garnish with lime and sesame seeds.

    7. Serve hot and enjoy!
