Ginger-Miso Glazed Salmon Rice Bowl

Wild Alaskan Salmon glazed with savory ginger-miso and served over rice with crisp veggies, edamame and spicy mayo for an easy, healthy weeknight dinner.

Ingredients
2 x 6 oz portions Wild Alaskan King Salmon

1 tablespoon white miso paste
1 tablespoon mirin
1/2 tablespoon minced ginger
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame seeds
blank
2 cups cooked white rice
1/2 cup cucumber, sliced
1/4 cup radish, sliced
1/4 cup cooked, edamame
2 tablespoons green onions, chopped
1/2 pack of Sea Salt Roasted Seaweed
Sriracha mayonnaise
Directions
Preheat the broiler to high and position a rack on the top shelf.
Cook rice according to directions on the package.
In a bowl, whisk the miso paste, soy sauce, mirin, rice vinegar, and minced ginger until smooth.
Spread glaze over the salmon and sprinkle with sesame seeds.
Broil the salmon for 8 to 10 minutes.
While salmon is broiling, assemble bowls with rice, cucumbers, edamame, radish, and seaweed.
Place salmon on top. Serve and enjoy!
Optional: drizzle sriracha mayonnaise over the bowl.
