Ginger-Miso Glazed Salmon Rice Bowl

Wild Alaskan Salmon glazed with savory ginger-miso and served over rice with crisp veggies, edamame and spicy mayo for an easy, healthy weeknight dinner.

Ginger-Miso Glazed Salmon Rice Bowl

Ingredients

  • 1 tablespoon white miso paste

  • 1 tablespoon mirin

  • 1/2 tablespoon minced ginger

  • 1 tablespoon soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon sesame seeds

  • 2 cups cooked white rice

  • 1/2 cup cucumber, sliced

  • 1/4 cup radish, sliced

  • 1/4 cup cooked, edamame

  • 2 tablespoons green onions, chopped

  • 1/2 pack of Sea Salt Roasted Seaweed 

  • Sriracha mayonnaise 

Directions

  1. Preheat the broiler to high and position a rack on the top shelf.

  2. Cook rice according to directions on the package. 

  3. In a bowl, whisk the miso paste, soy sauce, mirin, rice vinegar, and minced ginger until smooth. 

  4. Spread glaze over the salmon and sprinkle with sesame seeds. 

  5. Broil the salmon for 8 to 10 minutes. 

  6. While salmon is broiling, assemble bowls with rice, cucumbers, edamame, radish, and seaweed. 

  7. Place salmon on top. Serve and enjoy! 

  8. Optional: drizzle sriracha mayonnaise over the bowl.
