Smoked Salmon Niçoise Salad

Embrace the flavors of spring and summer with our Smoked Salmon Niçoise Salad. This wholesome dish features succulent smoked salmon, tender green beans, baby potatoes, and juicy cherry tomatoes, all drizzled with a zesty dressing. It's a delightful, healthy meal that's sure to brighten your seasonal dining experience.

Ingredients
Wild Alaska Smoked Salmon
3 cups baby potatoes
1 cup green beans
3 hard boiled eggs
6 radish, thinly sliced
1 cucumber, thinly sliced
1 cup cherry tomatoes, halved
½ cup olives

4tbsp olive oil
juice of 1 lemon
1 clove minced garlic
1 tsp Dijon mustard
salt & pepper
Directions
Thaw salmon.
Preheat oven to 375.
Roast potatoes for 35 minutes.
While the potatoes roast, boil green beans until tender. Drain and wash under cool running water immediately after cooking. Pat to dry.
Mix the dressing ingredients together in a jar and store in the fridge until ready to serve.
Assemble the salad by layering the ingredients together on a plate, topping with the flaked smoked salmon and hard boiled eggs.
Season with salt and pepper. Drizzle with the homemade dressing.
Serve and enjoy!
