Smoked Salmon Niçoise Salad

Wild Alaska smoked salmon flaked over baby potatoes roasted at 375°F, green beans boiled until tender and shocked cold, hard boiled eggs, thinly sliced radish and cucumber, halved cherry tomatoes and olives. The dressing is olive oil, lemon juice, minced garlic and dijon, shaken in a jar and chilled until you serve. Serves four to six.

Smoked Salmon Niçoise Salad

Ingredients

  • Wild Alaska Smoked King Salmon, flaked

  • 3 cups baby potatoes

  • 1 cup green beans

  • 3 eggs, for hard-boiling

  • 6 radishes, thinly sliced

  • 1 cucumber, thinly sliced

  • 1 cup cherry tomatoes, halved

  • ½ cup olives

  • 4 tbsp olive oil

  • juice of 1 lemon

  • 1 clove minced garlic

  • 1 tsp Dijon mustard

  • salt & pepper

Directions

  1. Thaw salmon.

  2. Preheat oven to 375°F.

  3. Halve the baby potatoes, toss with olive oil and salt, spread on a baking sheet, and roast for 35 minutes, until tender and browned at the edges.

  4. While the potatoes roast, hard boil the eggs, then peel and quarter.

  5. Also while the potatoes roast, boil the green beans until tender. Drain and rinse under cool running water immediately after cooking, then pat dry.

  6. Mix the dressing ingredients together in a jar and store in the fridge until ready to serve.

  7. Assemble the salad by layering the potatoes, green beans, radishes, cucumber, cherry tomatoes and olives on a plate, then top with the flaked smoked salmon and quartered hard-boiled eggs.

  8. Season with salt and pepper. Drizzle with the homemade dressing.

  9. Serve and enjoy!
