This vibrant green goddess tuna sandwich combines canned albacore tuna with an avocado dressing, jalapeño, cucumber, and crisp lettuce. Tucked between slices of sourdough bread, it's a wholesome, flavorful lunch option.

Ingredients

2 Cans Canned Albacore Tuna

1 small avocado
-
1 tbsp aioli (can substitute mayonnaise)

1 tbsp pesto
-
1 jalapeño, seeds removed and diced
-
½ lemon, juiced
-
salt & pepper
-
sourdough bread
-
lemon aioli
-
sliced cucumber
-
greens
Sandwich:
Directions
Strain tuna and flake apart in a medium sized bowl.
Add avocado, aioli, pesto, diced jalapeño, salt, and pepper. Mix until well combined.
Layer aioli, sliced cucumber, tuna salad, and greens on sourdough bread.
Slice and enjoy!
