Air Fryer Fish Taco Bowl

Wild Pacific halibut, or Alaskan cod, rubbed with taco seasoning and air fried at 400°F for ten to twelve minutes. While it cooks you make a mango salsa with bell pepper, red onion, jalapeño, cilantro and lime, and blend a taco sauce from sour cream, mayo and chipotle in adobo. Build it over rice with cabbage, beans and cotija.

Air Fryer Fish Taco Bowl

Ingredients

    • 1 cup white rice, cooked according to package

    • ½ cup chopped cabbage

    • ½ cup beans of choice

    • ½ avocado, sliced

    • chopped lettuce

    • crumbled cotija cheese

    • 1 mango

    • ¼ cup bell pepper, chopped

    • ¼ cup red onion, diced

    • fresh cilantro, chopped

    • ½ jalapeño, seeded and diced

    • 1 large lime, juiced

    • 1/2 tsp salt

    • 1 cup sour cream

    • 1/4 cup mayo

    • 2 chipotle peppers in adobo sauce

    • 1/2 lime, juiced

    • 1 clove minced garlic

    Directions

      1. Preheat airfryer to 400°F. Rub taco seasoning on filets until well seasoned.

      2. Place on foil and air fry for 10-12 minutes, until the fish flakes easily and is opaque throughout. 

      3. While the fish cooks, prepare the other ingredients. You can make the mango salsa by simply dicing the ingredients and tossing together. For the taco sauce, mix ingredients in a food processor or blender.

      1. Place rice on the base, top with fish, chopped cabbage, beans, lettuce, sliced avocado, mango salsa, and crumbled cotija cheese. Drizzle taco sauce over the top.

      2. Serve and enjoy!
