Ingredients

1 x 7.5oz Can of Albacore Tuna

3 tbsp mayonnaise
- 2 tbsp diced celery
- 2 tbsp diced white onion
- 2 tbsp diced pickles
- 1 tbsp capers
- lemon juice
- salt & pepper
- 1 tbsp chives

2 tbsp butter

2 slices of sourdough bread

2 eggs

Tuna Salad:

Directions
Mix together the albacore tuna and mayonnaise.
Add the diced celery, onion, pickles, capers, green onions, lemon juice, salt, and pepper to the tuna mixture.
In a skillet, fry the eggs in butter or olive oil. Season with salt and pepper.
In another skillet or after the eggs are cooked, lightly toast sourdough bread in butter.
Top your toasted sourdough with tuna salad and a fried egg. Enjoy!
