This Citrus Scallop Crudo is a simple, elegant holiday appetizer. Wild Alaska Weathervane scallops are dressed with pomegranate juice, fresh citrus juices, olive oil, salt, pepper, and honey. Garnish with chiles, herbs, and pomegranate seeds. It’s quick to prepare, light, and refreshing—perfect for snowy days and festive gatherings.
Ingredients
Wild Alaska Weathervane Scallops
¼ cup olive oil
½ cup pomegranate juice
juice of 1 blood orange
juice of 1 lemon
juice of 1 lime
2 tsp honey (more for less acidic flavor)

1 cucumber, thinly sliced
1 blood orange, sliced
pomegranate seeds
Serrano chile sliced
sea salt
Directions
In a bowl, whisk together olive oil, pomegranate juice, orange juice, lemon juice, and lime juice. Use honey to adjust the flavor.
In a shallow bowl, assemble the sliced cucumbers, sliced blood orange, and scallops.
Pour the citrus mixture over the scallops.
Garnish with pomegranate seeds, and chile slices.
Season with sea salt immediately before serving.
Serve and enjoy!
