Salmon Skewer over Mediterranean Couscous Salad
These recipes were created from our passion for seafood, using Premier Catch’s tasty, wild-caught Alaskan Salmon. We love to share them with our friends and family. From our kitchen to yours, here’s one of our favorites!
2 x 8oz Wild Alaskan King Salmon
2 tbsp olive oil
2 lemon, juiced
3-4 cloves minced garlic
salt & pepper
skewer sticks (soak wooden ones for 30 min before use to remove splinters)
1 cup couscous
1 cup water
2 tbsp olive oil
½ tsp salt
3 cups arugula
1 cup cherry tomatoes, halved
1 cup cucumber, chopped
½ cup small mozzarella balls
Thaw salmon and pat dry. Remove skin and chop into 1” cubes.
In a small bowl, whisk together lemon juice, minced garlic, olive oil, salt, and pepper.
Place chopped salmon in a ziplock bag and pour lemon juice mixture over. Let marinade for 30 minutes or up to 2 hours.
Preheat oven to 400 degrees or if using a grill, heat the grill to medium-high heat.
Add pieces of marinated salmon to skewer sticks. Optional: add an additional slice of lemon here.
Bake salmon for 10-12 minutes or grill for 8-10. When finished, remove and set aside.
To cook the couscous, bring water to a boil in a medium saucepan. When it reaches a boil, remove from heat and stir in couscous and salt and cover. Let rest 5 minutes.
Add 1-2 tsp olive oil and fluff with a fork. Let cool for 10 minutes.
Once the couscous is cooled, add arugula, chopped vegetables, mozzarella, and top with salmon skewer. Top with salt and pepper.
Serve warm and enjoy!
