Premier Catch Fresh Cod Ceviche
- 3/4 cup fresh lime juice
1/4 cup fresh lemon juice
1 tbsp honey
1 cup pico de gallo (or tomatoes, red onion, jalapeño, cilantro chopped)
1 avocado, cubed
1 cucumber, cubed
1/4 cup cilantro, chopped
Salt & pepper to taste
Thaw the cod fillets and chop into bite size pieces.
Squeeze the lemons and limes and mix with honey a small bowl.
Pour the mixture over the fish and refrigerate for 20 minutes to 2 hours, until the fish is cooked through and opaque.
After 30 minutes, stir in the pico de gallo, chopped cucumber, cilantro, and avocado. Season with salt and pepper.
Serve with tortilla chips or tostadas. Enjoy!
