2 x 8oz Wild Alaska King Salmon

olive oil
-
salt & pepper

4 cups cooked white rice

1 avocado, sliced

sesame seeds
-
limes to garnish

sliced cucumber to garnish

½ cup cherry tomatoes, halved
-
½ cup cucumber, sliced
-
1 tbsp cilantro, diced
-
1 tbsp green onions, diced
-
¼ cup red onion, diced
-
1 tbsp rice wine vinegar
-
2 tsp honey (adjust to taste)

juice of 1 lime

salt and pepper
Seared Salmon:

Tomato Cucumber Salad:
Directions
Thaw salmon and pat dry. Brush on olive oil and season with salt and pepper.
Cook rice according to package.
In a large bowl, add all of the tomato and cucumber salad ingredients. Gently mix until well combined.
Heat olive oil in a cast-iron skillet over medium-high heat.
Sear salmon for 3-4 minutes per side or until it easily flakes apart.
Serve salmon on top of rice. Add the salad, sliced avocado, and cucumber. Garnish with lime and sesame seeds.
Serve hot and enjoy!
