    Pan-Seared Salmon with Lemon, Butter & Dill

    1 lb Wild Alaskan King Salmon (2 x 8 oz portion)

    Salt & pepper

    4 tbsp butter

    1 tbsp fresh lemon juice

    1 tsp grated lemon zest

    1 tsp fresh dill, minced

    Melt butter over med-high heat in large skillet. Generously salt and pepper the salmon. Place salmon flesh side down in skillet and cook for 3 minutes. Flip over and continue to cook for 5 min, skin side down. Pour lemon juice over salmon and sprinkle lemon zest and fresh dill. Continue to cook until medium-rare, approx 2 more minutes.
